It is a perennial aromatic plant of the Alliaceae family, a plant of the same family as onion, originating from Central Asia. It grows to a height of 20 to 50cm
Garlic consists of a bulb divided into cloves. Each clove planted will produce a new head of garlic. It adapts to all soil types but prefers light soils Its stem is cylindrical, leafy up to the middle, rolled into a circle before flowering The flowers are grouped in umbels, white or pink in colour, from June to August.
It has been known for about 5000 years, from Central Asia it travelled to the Mediterranean basin and was used by the Egyptians then the Greeks and Romans.
The smell of garlic is due to the oxidation of allicin, a sulphurous essence with strong antibiotic action. This oxidation is immediate when a clove is cut because diallyl disulfide transforms into diallyl disulfide oxide.
